Kale Soup

1-2 lbs. sweet Italian sausage (pork or turkey)kale-soup
1/2 lb. hot Italian sausage (pork or turkey)
4-5 baking potatoes
3-4 lbs. kale
5 cloves garlic
5 Tbsp. vegetable oil
4 Tbsp. basil
4 Tbsp. oregano
1 (12-oz.) can light kidney beans
1 (12-oz.) can dark kidney beans
1 (12-oz.) can chick peas
1 (14.5-oz.) can stewed tomatoes
1 (28-oz.) can crushed tomatoes

Cut sausage into bite-side pieces, dice potatoes, and de-stem kale. Chop garlic and sauté with oil in 15-quart pan. Add meat to brown. Add kale, potatoes, basil, and oregano. Fill pan half-way with water and cook on high for 30 minutes. Add canned ingredients (without draining) and cook on medium-low for 30 minutes.

Note: Flavor is even better when reheated.
